Preheat your oven to 300°F (150°C). Place a shallow dish filled with boiling water on the lower shelf of the oven. 1. In a food processor or blender, combine 6 whole eggs, 1 cup cottage cheese, 1 cup shredded Gruyere cheese, 1 tsp hot sauce, and salt and pepper to taste. Blend for 30 seconds to 1 minute, until smooth. 2. Grease a muffin tray and pour the egg mixture into each cup, filling them about 3/4 full. 3. Cook the bacon until crispy, then finely chop it. Sprinkle the chopped bacon on top of each egg-filled muffin cup. 4. Place the muffin tray on the shelf above the water dish in the oven. Bake for 25-30 minutes, or until the eggs are set and slightly puffed. 5. Remove the egg bites from the oven and let them cool for a few minutes. Use a knife to loosen the edges of the egg bites and remove them from the muffin tray. 6. 7. Serve warm.
