This French toast bake is so easy & perfect for a healthy meal prep!! I used @hero bread that I got at my local giant eagle market district! It is new to market district and by the deli section :) this bread is a perfect low carb substitute for this

For this bake, Whisk together 4 eggs, 1 c almond milk, 1 tbsp vanilla extract, 1 tsp cinnamon, & 1/4 tsp nutmeg. Cube up 8 pieces of Hero white bread. Pour the wet mixture over the bread cubes & top with 1/2 c blueberries & 1/4 c walnuts. Bake at 375 for 45-50 minutes. Once done, slice & top with Greek yogurt, blueberries, & maple syrup.
