Brown Butter Triple Chocolate Chip Cookies

This cookie recipe is basically a staple in my house at this point. I am a firm believer that brown butter makes everything better (well that and chocolate!)

Brown 1 cup of unsalted butter in a saucepan at medium heat. Monitor and stir throughout the process to avoid burning. This will take 5-10 minutes. Once brown, transfer to your mixing bowl and let the butter cool down for 10 minutes. Once cool, beat with 1 1/4 cups brown sugar and 1/3 cup granulated sugar. Once fully combined, add in 1 tablespoon vanilla extract, 1 egg, and 1 egg yolk. Mix again. Then fold in 2 cups flour, 1 teaspoon baking soda, and a pinch of salt. Then fold in 1 cup semisweet chocolate chips, 1 cup white chocolate chips, and coarsely chopped dark chocolate. Refrigerate the mixture for at least 30 minutes. Bake at 350°F for 10-12 minutes. Allow the cookies to set for 20 minutes before transferring to a cooling rack.
