Melt ½ cup butter and mix with 3/4 cup coconut sugar. Add in 2 eggs, 1 teaspoon vanilla extract, and ¼ cup molasses. Add in ⅓ cup So Delicious Vanilla Coconut Yogurt Alternative and ¼ cup nut milk. Fold in 2 cups of all purpose flour, 1 teaspoon ginger powder, 1 ½ teaspoon baking powder, and ¼ teaspoon salt. Scoop the batter into a muffin pan. To make the crumble, combine 3 tablespoons melted butter, ½ cup flour, ½ cup coconut sugar, and 1 teaspoon cinnamon. Sprinkle the crumble mixture on top of each muffin. Bake at 375°F for 22-25 minutes.
