Peach Crumble Bars

Finalllllly breaking out my 10 lbs of peaches from the peach truck!! I peeled and sliced about half of them so expect a few more recipes ;) For the crust, mix together 1 c flour, 1 c old fashioned oats, 1/4 c brown sugar, 1/2 c sugar, 1 tsp cinnamon, & a pinch of salt. Once combined, mix in 2/3 c melted unsalted butter. Firmly pat 2/3 of the crust mixture into a lined 8x8 baking dish. For the filling, peel and dice 2 c peaches. Toss in 1 tsp lemon juice, 2 tbsp sugar, & 2 tsp cornstarch. Pour the peach mixture on top of the crust. Sprinkle on the remaining crust mixture on top. Bake at 350 for 35-40 mins.
