Combine the grated carrots, oats, protein powder, dashes of cinnamon, ginger, and nutmeg, baking powder, cashew milk, Greek yogurt, maple syrup, and vanilla in a blender. Blend the mixture until smooth. Pour into a baking dish and bake at 400°F for 18-20 minutes. Once baked, top with vanilla yogurt, coconut flakes, and walnuts.
