Beat together 1/2 c room temp butter and 1/2 c brown sugar & 1/2 c molasses for ~2 minutes. Add in one egg, 3 mashed bananas & 1 tsp vanilla extract. Once combined, fold in the dry ingredients (2 c flour, 1 tsp of ground ginger, 1 tsp of cinnamon, 1 tsp of pumpkin pie spice, 1 tsp baking powder, 1/2 tsp baking soda) and gently mix. Top with your streusel topping. Bake at 350 for 30-35 mins!
