Yes… you heard that right!!! I swapped olive oil instead of butter for my brown butter chocolate chip cookies that I always make & I was pleasantly surprised!! It brought a different depth of flavor to the cookies 😯😯

In one bowl, mix 1 cup olive oil with 1 1/4 cups brown sugar and 1/3 cup granulated sugar. Then add 1 egg, 1 egg yolk, and 1 tablespoon vanilla extract; mix again. Add in 2 cups all purpose flour, 1 teaspoon baking soda, and 1/4 teaspoon salt. Chop up 1 dark chocolate bar into varying chunks. Mix the chopped dark chocolate and 1 cup semisweet chocolate chips into the batter. Allow the batter to refrigerate for at least 30 minutes. Bake at 350 degrees Fahrenheit for 9-11 minutes. Allow to cool on the baking tray for at least 15 minutes before transferring to a wire rack. Top with salt if desired.
