In a bowl, combine 1/4 cup vanilla protein powder, 3 tablespoons peanut butter, 1 tablespoon maple syrup, and a little bit of salt. Mix until well combined. Form the mixture into egg shapes and freeze for 10 minutes to firm up. In a separate bowl, microwave 4 ounces of dark chocolate with 1 teaspoon of coconut oil until melted and smooth. Dip the frozen peanut butter eggs into the melted chocolate, ensuring they are fully coated. Place the dipped eggs back into the freezer for a few more minutes to allow the chocolate to set.
