In a bowl, mix together 1/2 c melted butter with 1 c granulated sugar. Then add in two eggs (one at a time). Then mix in 1/2 tbsp vanilla extract, 1/3 c Greek yogurt, & 1/3 c milk. In a separate bowl, combine 2 c flour, 1 tsp baking powder, 1 tsp baking soda, & 1/4 tsp salt. Gently fold the dry ingredients into the wet mixture. Toss 2 tbsp of flour with 2 c of blueberries. Then fold into the batter. Put your muffins in a lined muffin tray. Now let’s make the best part: the streusel. Combine 2 tbsp melted butter with 1/3 c sugar & 1/3 c flour. Add onto the muffin batter. Bake at 400 for - mini muffins: 15-18 mins - standard muffins: 24-26 mins - large muffins: 32-35 mins
