Healthy Blueberry Oatmeal Muffins

These blueberry oatmeal muffins are perfect to prep as an on-the-go breakfast or snack. They are gluten-free, dairy-free, and refined sugar-free, yet still delicious.

What you need

tsp vanilla extract
tsp baking powder

cup old fashioned oats

tsp baking soda

cup nonfat vanilla greek yogurt

tsp table salt

tsp cinnamon

tbsp coconut oil
egg
cup fresh blueberries

cup maple syrup

cup almond milk
Instructions
In a bowl, combine the vanilla Greek yogurt, nut milk, date syrup, melted coconut oil, egg, and vanilla extract. In a separate bowl, combine the old fashioned oats, flour, baking soda, cinnamon, baking powder, and salt. Fold the dry ingredients into the wet ingredients. Toss 1 cup of blueberries with 1 tablespoon of flour, then fold them into the batter. Bake at 375°F for 10 minutes. Enjoy!View original recipe
