In a bowl, beat together 1/2 c room temp butter, 1/4 c granulated sugar, & 3/4 c brown sugar. Once light and fluffy, add in 1 c of smooth peanut butter. Mix again then add 1 egg & 1/2 tsp vanilla extract. Then add in 2 c flour and 1 tsp baking soda. Refrigerate for 20 mins. Then scoop and roll the cookie dough in sugar. Bake at 350 for 8-10 minutes.
